Four years ago, while working in marketing and graphic design, I decided to go back to school to study nutrition.
Between the day that I enrolled in the Didactic Program of Dietetics at Nicholls State University in Thibodaux, Louisiana and today, quite a bit of important learning has happened.
Admittedly, I began my nutrition studies with highly dogmatic beliefs about which foods were healthy and which were not. I believed that if folks only had access to thorough nutrition education, health outcomes in the United States might improve.
Hundreds of podcast episodes, anti-diet books written by brilliant registered dietitians and researchers, a bachelor of science, and a public health-focused master of science later, and my views on food and health have shifted in a big way. I feel so lucky to now be serving my community as a registered dietitian who helps patients view food as one piece of a very large puzzle that makes up overall health.
This space is available to all humans: home chefs, intuitive eaters, food rule followers, and everyone in between. My hope is that the more time that you spend here, the more you can trust your body and give it what it is asking for.
I am personally vegetarian purely because I love animals, so you might notice that my recipes are all plant-based. However, I spent the vast majority of my life eating meat. So I fully support you as you decide to eat however and whatever YOU want. You’re the only one who can decide that – I’m just here to guide, validate, inspire, and answer your questions.
