Breakfast Rice Bowls in the Microwave?
Yes, yes. If you’re anything like almost everybody else on earth, you probably don’t have several leisurely hours to dedicate to preparing breakfast in the morning. But, you probably also want to feed yourself so that you’re fueled for your day ahead.
This recipe required just a little bit of planning ahead in the form of cooking extra rice earlier in the wee. Then, you can have a super quick, nutrient-dense breakfast ready in minutes.
Okay, But Can I Make This in a Frying Pan?
Of course. If you have the time, frying your egg and heating up your rice in a pan is always going to be just a bit more delicious. BUT – sometimes those few extra minutes of work are the barrier preventing us from eating any breakfast at all. That’s why I love coming up with these recipes that truly take around 5 minutes to put together in the morning.
Optional Topping: Marinated Cucumbers
The marinated cucumbers that I recommend as one of the toppings for this breakfast rice bowl can really be made however you like. There are tons of good quick pickling/marinating recipes out there. I like this Sweet and Spicy Cucumber Slices recipe in particular.
Other Optional Toppings for Breakfast Rice Bowls
My favorite toppings for these breakfast rice bowls, in addition to the marinated cucumbers, are avocado, full fat Greek yogurt, sriracha, sesame seeds, and thinly sliced romaine lettuce.
Get creative and use toppings that appeal to your unique taste – maybe you want to top yours with kimchi or cabbage and Kewpie mayo. You might decide that your bowl is in dire need of some garlic and ginger. Whatever floats your boat. Maybe you want your bowl to have the savory umami-ness of some jammy sun-dried tomatoes and mushrooms.
This recipe is particularly well-suited to customization because you’re starting out with a pretty blank canvas of eggs and rice. From there, you can take it in any direction to achieve the flavor profile that you want.
Breakfast Rice Bowls
Ingredients
- 1 cup cooked jasmine rice
- 2 tsp olive oil
- pinch salt and pepper
Optional Toppings
- full fat Greek yogurt
- sriracha
- thinly sliced romaine lettuce
- marinated cucumbers
- sesame seeds
- avocado
Instructions
- Divide rice into 2 bowls and drizzle with olive oil. Crack an egg into each bowl and beat with a fork.
- Top with a pinch of salt and pepper. Cover and microwave on high for about 1 minute and 30 seconds or until egg white is completely set.
- Top with anything you want! I recommend full fat yogurt, sriracha, marinated cucumbers (recipe linked above), thinly sliced romaine lettuce, sesame seeds, and avocado.
