Breakfast Rice Bowls

- 1 cup cooked jasmine rice
- 2 tsp olive oil
- pinch salt and pepper
Optional Toppings
- full fat Greek yogurt
- sriracha
- thinly sliced romaine lettuce
- marinated cucumbers
- sesame seeds
- avocado
Divide rice into 2 bowls and drizzle with olive oil. Crack an egg into each bowl and beat with a fork.
Top with a pinch of salt and pepper. Cover and microwave on high for about 1 minute and 30 seconds or until egg white is completely set.
Top with anything you want! I recommend full fat yogurt, sriracha, marinated cucumbers (recipe linked above), thinly sliced romaine lettuce, sesame seeds, and avocado.
