Breakfast Rice Bowls

Ingredients
  

  • 1 cup cooked jasmine rice
  • 2 tsp olive oil
  • pinch salt and pepper

Optional Toppings

  • full fat Greek yogurt
  • sriracha
  • thinly sliced romaine lettuce
  • marinated cucumbers
  • sesame seeds
  • avocado

Instructions
 

  • Divide rice into 2 bowls and drizzle with olive oil. Crack an egg into each bowl and beat with a fork.
  • Top with a pinch of salt and pepper. Cover and microwave on high for about 1 minute and 30 seconds or until egg white is completely set.
  • Top with anything you want! I recommend full fat yogurt, sriracha, marinated cucumbers (recipe linked above), thinly sliced romaine lettuce, sesame seeds, and avocado.
